[Life: EAT] BBQ City-Style
Today Mary blogged an awesome series of posts about BBQing. Unfortunately most bbq (and the best) requires at least a few square feet of outdoorspace and a grill. For those of us who are sans outdoor, cooped-up city style in an apt, I have a couple of baking alternatives for my two favorite bbq meals - brisket & ribs. Cooking in the oven doesn’t taste as good as on the grill (and never as good as the Salt Lick), but if you have the craving it is quite tasty.
Oven Baked Beef Brisket
8 pounds of beef brisket
2 teaspoons Onion salt
2 teaspoons of Celery salt
1 tablespoon of dry mustard (not yellow, the dijon)
1 teaspoon of ground black pepper
2 teaspoons sea salt
4 tablespoons of Worcestershire sauce
2 tablespoon of Liquid smoke
1 bottle bbq sauce (I love Mary’s recommendation - the Salt Lick)
3/4 cups packed brown sugarTrim excess fat from brisket if desired. I like mine on and moist. Cover both sides of meat with seasonings using about 1/2 of the amount allotted above - but enough to generously cover (all salts, peppers, etc - pat them into the meat), Worcestershire sauce and liquid smoke. (Note: I add in a dash of hot sauce and a garlic clove or two, but I’m a spicy gal) Ensure all seasonings are rubbed into meat and refrigerate well covered overnight. Season meat again with remainder of seasonings and wrap in foil. Seal tightly.
Place in pan and bake at 250 degrees for 8 hours or about 1 hour per pound. Remove pan from oven and refrigerate until cool and fat is congealed. Skim fat, slice meat and return to baking pan.
Mix bbq sauce, drippings from the brisket (you can cut this out if the fat grosses you out) and brown sugar. Bake at 350 degrees for 1 hour before serving. Serves 15.
Note - this is going to make your apt smell like BBQ. No doubt about that. But better than smelling fishy - in my opinion :) Although not as healthy as the water dwelling friends. I haven’t cooked the ribs in awhile. I’ll save that for another post once I’ve had a chance to try my recipe again, hopefully soon! July 4th weekend maybe?
i love a good recipe for bbq! in fact, coincientally enough, i jsut got back from eating bbq for lunch. mmmmm, yes.
